Tex Mex Pancakes

  1. In a bowl, use a whisk to mix together pancake mix and 2/3 cup (150 mL) water until smooth. 
  2. Mix in corn, feta cheese, green onion, chipotle pepper, onion powder and salt.
  3. Cook pancakes in skillet according to package instructions. Serve with salsa, if desired.

  • Frozen ingredients can be added to the batter either frozen or thawed.
  • For gluten-free pancakes, use Compliments Gluten-Free Pancake & Waffle Mix. Mix batter according to package directions. For every 1 cup (250 mL) of mixed gluten free batter, use recipe's ingredient add-ins.
