Sweet Potato Salad with Raisins and Spiced Nuts

Ingredients

  1. 2 large sweet potatoes, peeled and diced into 1 inch (2.5 cm) cubes
  2. 1 tbsp (15 mL) white wine vinegar
  3. 1 tbsp (15 mL) fresh lime juice
  4. 2 tsp (10 mL) Sensations by Compliments Cilantro Seasoning Paste
  5. 1 tsp (5 mL) sugar
  6. 1/4 tsp (1 mL) each salt and pepper
  7. 3 tbsp (45 mL) olive oil
  8. 1/2 cup (125 mL) diced red pepper
  9. 1/3 cup (75 mL) Compliments Golden Raisins
  10. 1/3 cup (75 mL) finely sliced Compliments Organic Green Onions
  11. 3 tbsp (45 mL) roughly chopped Sensations by Compliments Jalapeno Kettle Cooked Peanuts

Method

  1. In a large saucepan, simmer sweet potatoes in salted water over medium heat for approx. 10 to 12 min. or until just cooked through. Drain and cool.
  2. Meanwhile, whisk together vinegar, lime juice, cilantro paste, sugar, salt and pepper in a large bowl. Whisk in olive oil and set aside.
  3. Just before serving, gently mix the potatoes into dressing, along with red pepper. Adjust seasoning, if necessary and garnish with raisins, green onion and chopped peanuts.
