Sweet and Spicy Rice Noodles with Broccoli

Ingredients

  1. 2 tbsp (30 mL) Sensations by Compliments Apricot & Chili Cheese Topper & Spread, or red pepper jelly
  2. 2 tbsp (30 mL) miso paste
  3. 2 tbsp (30 mL) soy sauce
  4. 1 tbsp (15 mL) rice vinegar
  5. 8 oz (250 g) Asian rice noodles (1/8-in./3-mm wide)
  6. 2 tsp (10 mL) sesame oil
  7. 3 cups (750 mL) small broccoli florets
  8. 1 small onion, diced
  9. 1 clove garlic, minced
  10. 1 cup (250 mL) shredded cooked chicken
  11. 2 tbsp (30 mL) butter, room temperature
  12. 2 tbsp (30 mL) sriracha hot sauce (optional)

Method

  1. In small bowl, whisk together Compliments Apricot & Chili Cheese Topper, miso, soy sauce and vinegar. Set aside.
  2. Cook noodles according to package directions; drain and set aside. Heat sesame oil in wok or large skillet set over medium-high heat. Cook broccoli, onions and garlic 3 to 5 min., or until tender-crisp. Stir in reserved miso mixture, rice noodles, chicken and butter; toss to coat.
  3. Drizzle with sriracha, if using, to serve. 

Tips:
  • For a vegetarian option, substitute cubed tofu for the chicken. 
  • Substitute rice noodles with egg noodles or angel hair pasta.
