Sweet and Spicy Nuts

Makes: 5 cups


  1. 1 egg white
  2. 1/4 cup (60 mL) sugar
  3. 1 tsp (5 mL) salt
  4. 1/4 tsp (1 mL) cayenne pepper
  5. 5 cups (1.25 L) mixed nuts (almonds, walnuts, pecans, pistachios or hazelnuts)


  1. Preheat oven to 350ºF (180ºC). Whisk egg white in a large bowl until foamy, about 1 min. Whisk in sugar, salt and cayenne pepper. Add nuts and stir to coat.
  2. Scrape nuts onto parchment paper-lined baking sheet in a single layer. Bake in centre of oven for 10 min.; reduce temperature to 275ºF (140ºC) and bake another 15 min. Let nuts cool on tray. Break apart before serving.
