Hearty Sausage Kale and Bean Stew

  1. 1 tsp (5 mL) olive oil
  2. 1 lb (500 g) mild Italian sausages
  3. 1 onion, finely chopped
  4. 1 container (625 mL) Sensations by Compliments Home Style Chicken Noodle Soup
  5. ½ cup (125 mL) water
  6. 1 can (15 oz) no-salt-added cannellini beans, drained and rinsed
  7. ½ bunch kale, tough stems discarded, leaves chopped into bite-size pieces (approx. 2 cups/500 mL)


  1. In a skillet set over medium-high heat, cook the sausages in the oil, about 10 min., or until browned on all sides and cooked through. Remove from skillet and set aside on a plate.
  2. In same skillet, cook onion over medium heat until translucent. Stir in soup and add water; bring to a boil then reduce to a simmer.
  3. Meanwhile, thinly slice the sausages. Add to soup mixture, along with the beans and kale. Simmer 5 to 10 min., stirring occasionally, or until kale is tender.
