- Mix together brown sugar, BBQ sauce, vinegar, tomato paste and seasoning to make a glaze. Brush onto fish.
- Place a 9 in. (23 cm) cast-iron skillet in BBQ preheated to medium-high. Pour oil into skillet. Add fish, sauce-side up. Cook 3 to 5 min. Turn over. Brush with any remaining glaze. Close BBQ lid and cook another 3 min., or until fish starts to flake and internal temperature reaches 70 C (158 F). Sprinkle with crushed chips. Serve immediately.
Alternatively, cook fish on the stovetop or over a campfire grate.
