Spice-Roasted Almonds

Makes: 2 cups

Ingredients

  1. 2 cups (500 mL) whole blanched almonds
  2. 2 tbsp (30 mL) olive oil
  3. 2 tsp (10 mL) sea salt
  4. 2 tsp (10 mL) finely grated lemon zest
  5. 1 tsp (5 mL) ground cumin
  6. 1 tsp (5 mL) sugar
  7. 1/2 tsp (2 mL) each paprika and chili powder
  8. 1/4 tsp ( 1 mL) cayenne pepper

Method

  1. Preheat oven to 350°F (180°C). In a large bowl, toss together almonds, olive oil, sea salt, lemon zest, cumin, sugar, paprika, chili powder and cayenne pepper.
  2. Spread in single layer on a baking sheet lined with parchment paper. Bake, stirring occasionally, until well toasted, 20 to 25 min. Let cool to room temperature on baking sheet. Store in an airtight-container for up to 1 week.
