Spicy Sausage & Grilled Veggie Spaghettini

Ingredients

  1. 2 yellow peppers, seeded and quartered
  2. 2 medium zucchini, sliced lengthwise
  3. 2 tbsp (30 mL) olive oil
  4. 4 spicy Italian sausages
  5. 1 pkg (375 g) spaghettini
  6. 1 can (156 mL) tomato paste
  7. juice of 1 lime
  8. 2 garlic cloves
  9. 1 cup (250 mL) coarsely chopped arugula
  10. 3/4 cup (175 mL) grated Cheddar

Method

  1. In bowl, toss peppers and zucchini with oil. Place veggies and sausages on barbecue preheated to high; grill until veggies are tender and lightly charred. Cook sausages until browned and cooked through; about 10 min.
  2. Meanwhile, cook spaghettini according to package instructions. Reserve 1/2 cup (125 mL) cooking water; drain pasta.
  3. Mix tomato paste, lime juice and garlic. Add to hot pasta and toss to coat.
  4. Slice sausages and coarsely chop grilled vegetables. Set on platter with pasta. Scatter arugula and cheese on top.
