Taco Soup

  1. 11/4 pounds lean ground beef
  2. 1 onion, chopped
  3. 2 cloves garlic, minced or pressed
  4. 2 tablespoons Taco Seasoning
  5. 1 tablespoon Sensations Extra Virgin 100% Olive Oil
  6. 1 carton (32 ounces) Compliments reduced sodium beef broth
  7. 1 can (15 ounces) Compliments Pinto Beans
  8. Compliments White or Yellow Tortilla Chips
  9. Chopped tomatoes
  10. Chopped green onions
  11. Sensations Shredded Tex Mex Cheese
  12. Lucerne® Sour Cream


  1. In a 5- to 6-quart pan, combine beef, onion, garlic, taco seasoning, and olive oil over medium high heat. Stir often until meat is lightly browned,7-8 minutes.
  2. To pan, add broth and beans. Bring to a simmer over high heat, stirring often. While soup heats, arrange chips in a serving basket.
  3. Divide tomatoes, onions, cheese, and sour cream among separate serving bowls.
  4. When soup is hot, ladle into bowls. Offer chips, tomatoes, onions, cheese, and sour cream to add to taste.

Healthier Alternative: To cut a bit of fat out of this family-friendly soup, use ground turkey instead of beef and Lucerne® Light Sour Cream
