Spring Minestrone Soup

  1. 2 cartons (32 ounces each) Compliments Beef Broth
  2. 2 cups Compliments Elbow Macaroni
  3. 1–11/4 pounds mild Italian sausage, casings removed
  4. 1 onion, chopped
  5. 1 red bell peppers, stemmed and seeded, and chopped
  6. 11/2 cups Compliments Frozen Peas and Carrots
  7. 1 cup Compliments Shredded Parmesan Cheese
  8. 1/4 cup Compliments Pesto Sauce


  1. In a 5 to 6-quart pan, combine broth and macaroni over high heat. 
  2. Bring to a boil,then reduce heat, cover, and simmer until pasta is tender to bite, about 8 minutes.
  3. Meanwhile, in a 12-inch nonstick frying pan, combine sausages, onion, and red pepper over medium high heat. Stir often, breaking up sausage into small pieces,until well browned, 10-12 minutes. 
  4. Add peas and carrots and cook until vegetablesare tender, about 5 minutes.
  5. When macaroni is done, carefully transfer browned sausages and vegetables to broth along with pasta. Add parmesan and pesto; stir until cheese is melted.
  6. Ladle into bowls and serve.
