Slow Cooker Whole Chicken with Sage Butter and Onions

Ingredients

  1. 1/4 cup (60 mL) unsalted butter, melted
  2. 2 tbsp (30 mL) finely chopped fresh sage
  3. 2 tsp (10 mL) paprika
  4. 1 tsp (5 mL) each garlic powder, mustard powder, salt
  5. 1/2 tsp (2 mL) pepper
  6. 1 whole chicken (3 lb/1.5 kg)
  7. 3 onions, quartered
  8. 1/4 cup (60 mL) reduced sodium chicken broth

Method

  1. Stir melted butter with sage, paprika, garlic powder, mustard powder, salt and pepper. Rub over chicken. 
  2. Place onions and broth in bottom of slow cooker. Set chicken over top, breast-side up. Cover and cook on HIGH for 2 1/2 to 3 1/2 hr., or until chicken reaches 165°F (74°C) in thickest part of thigh. Serve chicken with onions. 
Tip: Substitute sage with 2 tsp (10 mL) chopped fresh thyme.
