Slow Cooker Coq Au Vin

Ingredients

  1. 3 lb (1.5 kg) chicken pieces or 1 whole chicken cut into 8 pieces
  2. 1/2 tsp (2 mL) each salt and pepper
  3. 1/3 cup (75 mL) all-purpose flour, divided
  4. 2 tsp (10 mL) vegetable oil
  5. 2 tsp (10 mL) vegetable oil
  6. 2 tsp (10 mL) vegetable oil
  7. 1/4 cup (60 mL) chopped bacon
  8. 1 onion, chopped
  9. 1 cup (250 ml) chopped celery
  10. 4 carrots, chopped into1-in. (2.5-cm) pieces
  11. 2 cups (500 mL) whole small white mushrooms
  12. 1 1/2 cups (375 mL) dry red wine
  13. 1 1/2 cups (375 mL) dry red wine
  14. 1 cup (250 mL) reduced sodium chicken broth
  15. 1/4 cup (60 mL) tomato paste
  1. 3 cloves garlic, minced
  2. 6 sprigs fresh parsley to garnish

Method

  1. Season chicken pieces with salt and pepper and toss with 1/4 cup (60 mL) of the flour to coat. Heat oil in a large skillet over medium-high heat. Brown chicken pieces; place in slow cooker. In same skillet, add bacon, onion and celery; sauté until bacon begins to brown, about 5 min. Transfer to slow cooker; add carrots and mushrooms. 
  2. Whisk together wine, broth, tomato paste, garlic and remaining flour. Stir into skillet and bring to a boil; add to slow cooker. Cover and cook on LOW for 5 hr. or until chicken is fully cooked. Serve garnished with sprigs of parsley.
