Preheat oven broiler to high. In a large bowl, gently mix together turkey, eggs, bread crumbs, 1 tablespoon soy sauce, 1 tablespoon sesame oil, and the ginger until blended.

Form mixture into 8 equal burgers, each about 3 inches wide.

Place burgers on a broiler pan.
Step 4
Broil 4-6 inches from heat until lightly browned on top, about 5 minutes.
Step 5
Turn burgers over and continue broiling until browned and no longer pink in center, cut to test, 3-4 more minutes.
Step 6
While burgers cook, mix together mayonnaise and 1 teaspoon soy sauce until well blended. Set aside.
Step 7
In another bowl, toss together cabbage and remaining soy sauce and sesame oil.
Step 8
When burgers are done, split rolls in half horizontally with a serrated knife.
Step 9
Place the bottom of rolls on a serving platter.
Step 10
Top each with a burger and equal portions of cabbage mixture.
Step 11
Spread the cut side of each roll top with mayonnaise mixture to taste. Place on top of burgers and serve.
