Grilled Fruit Skewers with Habanero Caramel Sauce

  1. 2 tbsp (30 mL) butter
  2. 1/2 cup (125 mL) sugar
  3. 1/4 cup (60 mL) 35% whipping cream
  4. 3 tbsp (45 mL) Sensations by Compliments Spirited Mickie Tequila Lime Habanero BBQ Sauce
  5. 2 mangos, peeled, cut into large chunks
  6. 1/2 papaya, peeled, cut into large chunks
  7. 1/2 pineapple, peeled, cut into large chunks
  8. 8 wooden skewers, soaked


  1. Melt butter and sugar in medium saucepan over medium heat. When sugar is dissolved, increase heat to medium-high. Stir in whipping cream and BBQ sauce. Boil 3 to 5 min. until thickened. Cool slightly. 
  2. Meanwhile, alternately thread mango, papaya and pineapple cubes onto skewers. 
  3. Place skewers on grill preheated to medium-high heat. Cook 5 to 7 min., turning occasionally, until fruit is lightly golden and marked. Serve with warm caramel sauce for dipping. 

Tip: When in season, make skewers with local strawberries, melons and peaches.
