Ingredients

  • 1 lb (500 g) mild or hot Italian sausage, cut in half length-wise
  • 1 tsp (5 mL) canola oil
  • 1 yellow potato, peeled, thinly sliced into rounds
  • 1/2 cup (125 mL) apple cider
  • 1/4 cup (60 mL) fresh thyme, leaves only
  • 1 tbsp (15 mL) chopped fresh sage
  • 1 Cortland or Empire apple, cored, cut into thin wedges
  • 2 cups (500 mL) kale, stemmed and thinly sliced

Method

  1. In a non-stick skillet, cook sausages over medium-high heat, turning once, 7 min. Remove sausages and set aside.
  2. Add oil and potatoes to skillet and cook, turning once, 7 min. Add cider, thyme and sage to skillet. Bring to a boil, cover, reduce heat and simmer 2 min. Add apple and cook, stirring gently, 3 min. Add kale and cook, stirring gently, 1 min. Add cooked sausages to skillet and serve.
