Butterflied Stuffed Sausage

  1. 1/2 apple, finely chopped
  2. 1/2 cup (125 mL) shredded old cheddar cheese
  3. 1/4 cup (60 mL) coarse fresh bread crumbs
  4. 4 tsp (20 mL) Dijon mustard
  5. 4 tsp (20 mL) chopped fresh chives, divided
  6. 2 tsp (10 mL) apple cider vinegar
  7. 6 honey garlic sausages (each about 5 oz/150 g)


  1. Stir together apple, cheese, bread crumbs, mustard, 1 tbsp (15 mL) chives, and vinegar.
  2. Preheat grill to medium-high; grease grate well. Butterfly sausages by slicing lengthwise without cutting all the way through; open flat. Grill sausages, cut sides down, for 5 to 7 minutes or until well marked.

  3. Flip sausages; top evenly with apple mixture. Close lid and cook for 5 to 7 minutes or until cheese has melted and internal temperature has reached 165°F (74°C). Let stand for 5 minutes. Garnish with remaining chives.

Tip: If desired, you can substitute Italian or Oktoberfest sausages.
