Spicy Grape & Tomato Salsa

Ingredients

  1. 2 cups (500 mL) mixture of seedless black and green grapes, halved
  2. 8 cherry tomatoes, halved
  3. 1 yellow pepper, seeded and finely diced
  4. 1/2 jalapeno pepper, seeded and finely diced
  5. 1/4 cup (60 mL) finely chopped green onions
  6. 1/4 cup (60 mL) finely chopped fresh cilantro
  7. 2 tbsp (30 mL) honey
  8. 2 tbsp (30 mL) olive oil
  9. 2 tbsp (30 mL) red wine vinegar
  10. 1 tbsp (15 mL) finely grated lime zest
  11. 1 tbsp (15 mL) lime juice
  12. 1 tsp (5 mL) Dijon mustard
  13. salt and pepper to taste

Method

  1. In bowl, combine grapes, tomatoes, yellow pepper, jalapeno pepper and green onion. Set aside.
  2. In another bowl, whisk together cilantro, honey, oil, vinegar, lime zest and juice, mustard, salt and pepper. Pour onto grape mixture. Toss gently. Serve with grilled meats or grilled or poached fish.
