Ingredients

  • 4 salmon fillets (6 oz./175 g each)
  • 2 tbsp (30 mL) fresh lemon juice
  • 1 tbsp (15 mL) olive oil
  • salt and white pepper to taste
  • 1/2 cup (125 mL) white wine
  • 1 garlic clove, minced
  • 1 1/4 cups (300 mL) 35% whipping cream
  • 1 (14 oz.) can artichokes hearts, drained and coarsely chopped
  • 2 tbsp (30 mL) chopped fresh basil

Method

  1. Preheat the oven to 425 F (220 C). Place the salmon, skin-side down, in a baking dish lined with parchment paper. Drizzle with lemon juice and olive oil. Season with salt and pepper. Bake 15 min., or until just cooked through.
  2. Meanwhile, add the wine and garlic to a skillet and cook until the wine is reduced by half. Mix in the whipping cream and simmer until mixture reduces to a slightly thickened sauce. Add artichokes and simmer until just heated through, about 2 min. Stir in basil.
  3. Plate salmon and spoon over sauce to serve.
