Smoked Salmon, Capers & Arugula Flatbread

  1. 1 Original Flatbread
  2. 1 pkg Light Cream Cheese
  3. 1 1/2 cups arugula, tightly packed, divided
  4. 2 tbsp lemon juice
  5. 1 pkg Atlantic Smoked Salmon
  6. 2 tbsp Honey Mustard Prepared Mustard
  7. 2 tbsp chopped fresh dill
  8. 2 tbsp thinly sliced green onion
  9. 1 tbsp capers
  10. 1 egg, hard boiled, grated
  11. 1/2 tsp pepper


  1. Bake flatbread according to package directions. In a food processor, blend cream cheese, 1 cup (250 mL) arugula and lemon juice until smooth. Evenly spread cream cheese mixture on prepared flatbread. Place smoked salmon in a single layer on flatbread, drizzle with honey mustard and top with remaining arugula, dill, green onion, capers and egg. Cut into 16 small squares and sprinkle pepper overtop. Serve immediately.
Leftover slices make a tasty breakfast for the next day.
