Summer Salad with Melons

  1. 4 large sliced ripe heirloom tomatoes
  2. 1 honeydew melon cut into 1-inch cubes, skin removed (any melon will work)
  3. 8 ounces Fresh Mozzarella, cut into 1/4 inch thick slices
  4. 10 basil leaves
  5. salt and pepper to taste
  6. 1/2 cup croutons
  7. 1/4 cup whole grain mustard
  8. 1 cup vinegar of choice
  9. 11/2 teaspoons salt
  10. 2 cups extra virgin olive oil


  1. To make vinaigrette, blend mustard, vinegar, and salt in blender. In a gradual stream, add olive oil to blender until it becomes a nice creamy vinaigrette.
  2. Season melon, tomatoes, and mozzarella with salt and pepper and arrange on plate. Dress heavily with vinaigrette and garnish with torn basil leaves and croutons.
