Ingredients

  • 6 cups fresh strawberries, washed, dried, hulled and halved
  • 2 tbsp extra virgin olive oil
  • 2 tbsp Aged Balsamic Vinegar of Modena
  • 1tsp each salt and pepper
  • cups loosely packed arugula, washed and thoroughly dried
  • tbsp sliced Mint

Method

  1. In a large bowl, combine the strawberries, olive oil, vinegar, salt and pepper.
  2. Add arugula and mint to strawberry mixture. Gently toss to combine and serve immediately.
