Honey-Mint Fruit Salad

  1. 2 Honeycrisp Apples, cored and cubed
  2. 1 fresh mango, peeled and cubed
  3. 1 cup blueberries or blackberries
  4. 1 cup strawberries, quartered
  5. 1 lime, juiced
  6. 1 tbsp Pure Natural Liquid Honey
  7. 6 fresh Mint leaves, thinly sliced
  8. 1 tbsp Medium Desiccated Unsweetened Coconut


  1. In a large bowl, combine apples, mango and berries.
  2. In a small microwaveable bowl, mix lime juice and honey. Microwave on HIGH for 15 to 20 sec. to soften honey. Pour mixture over fruit. Add mint and gently toss to combine.
  3. In a dry skillet, toss coconut over medium heat until lightly toasted, 5 to 7 min. Sprinkle over fruit salad right before serving.
