Smoked Salmon Poke Salad Bowl

Ingredients

  1. 1/3 cup (75 mL) sesame oil
  2. 3 tbsp (45 mL) lime juice
  3. 2 tbsp (30 mL) rice vinegar
  4. 2 tbsp (30 mL) reduced sodium soy sauce
  5. 1 tbsp (15 mL) toasted sesame seeds
  6. 1 pkg (200 g) smoked salmon
  7. 4 cups (1 L) mixed greens
  8. 4 radishes, thinly sliced
  9. 1 small red onion, thinly sliced
  10. 1/4 cup (60 mL) pickled ginger
  11. 1/4 cup (60 mL) chopped toasted macadamia nuts
  12. 4 sheets (50 g) toasted nori, thinly sliced

Method

  1. In bowl, whisk together sesame oil, lime juice, rice vinegar, soy sauce and sesame seeds. 
  2. Place smoked salmon in separate bowl. Pour in half the sesame oil dressing. Gently stir to coat. Set aside.
  3. Divide mixed greens into 4 shallow bowls. Top with salmon, radishes, red onion, pickled ginger, macadamia nuts. Drizzle with remaining dressing. Sprinkle with nori. 

Tips:
- Drizzle with Sriracha sauce, if desired.
- For a hearty meal, serve on a bed of quinoa.
