Sage Roasted Potatoes

Roasted Potatoes with sage

Yields 2
  • 1 bunch Sage | leaves picked
  • 500 g (2 cups) Russet or yukon-gold potatoes
  • 4 Cloves garlic
  • Sea salt & cracked black pepper to taste
  1. Cut the potatoes into generous chunks, then boil for 15 mins before draining.
  2. Spread chunks on a baking tray, then mix in sage, garlic, 2 tbsp. olive oil, a good pinch of salt, and pepper.
  3. Now use the base of a heavy pan to lightly squish the potatoes – they don’t have to be completely flat.
  4. Heat oven to 200oC (400oF) and roast for around 40-45 mins, or until golden and crisp.
