Roasted Squash Dip

Makes: 1.5 cups

Ingredients

  1. 1 ½ cups (375 mL) roasted or mashed leftover squash
  2. 2 tbsp (30 mL) light cream cheese
  3. 1/2 tsp (2 mL) Roasted Garlic Seasoning Paste
  4. 1/8 tsp (0.5 mL) cayenne pepper
  5. 1 tbsp (15 mL) lemon juice
  6. 1/8 tsp (0.5 mL) salt
  7. 2 tsp (10 mL) finely chopped chives
  8. 1 tsp (5 mL) olive oil
  9. 2 tbsp (30 mL) slivered almonds, toasted

Method

  1. In a blender or food processor, purée squash, cream cheese, garlic paste, cayenne, lemon juice and salt on medium-high until smooth, scraping down sides as needed. Transfer purée to a small bowl and garnish with chives, olive oil and almonds.
