Rhubarb, Bourbon & Bacon Jam

Makes: 2 cups (500 mL) jam


  1. 6 strips Sensations by Compliments Peppered Bacon, finely chopped (7 oz/200 g)
  2. 2 cups (500 mL) chopped fresh or frozen rhubarb
  3. ½ cup (125 mL) finely diced onion
  4. 2 cloves garlic, minced
  5. 1 tbsp (15 mL) peeled, minced fresh ginger
  6. 1 tsp (5 mL) ground allspice
  7. ¼ tsp (1 mL) ground cinnamon
  8. 1 cup (250 mL) Sensations by Compliments Spirited Mickie Sweet & Tangy Bourbon BBQ Sauce


  1. Set large saucepan over medium heat. Cook bacon 5 to 8 min., or until bacon is lightly browned and crisp, but not dry. Transfer bacon to plate and remove all but 2 tbsp (30 mL) bacon fat from saucepan.
  2. Stir bacon, rhubarb, onion, garlic, ginger, allspice and cinnamon into saucepan over medium heat; cook 5 min. or until vegetables are softened. Stir in BBQ sauce and bring to a simmer. Immediately reduce heat to medium-low and continue cooking, stirring occasionally, about 15 min. until thickened. (Cool completely before storing in refrigerator in sealed container for up to 2 weeks.) Serve with burgers, grilled cheese sandwiches, cheese platters or stir into mac 'n' cheese.
