Ingredients

1/4 cup
fresh lime juice

vegetable oil

hot Asian-style chili sauce

finely grated fresh ginger

medium English cucumber, thinly sliced

medium shallots, finely diced
1/2 cup
unsalted, roasted peanuts, coarsely chopped
125 mL
1/4 cup
chopped fresh cilantro
60 mL

Method

Step 1

In bowl, to make dressing, whisk together lime juice, oil, sugar, chili sauce and ginger. Add the cucumber, shallots, peanuts and cilantro. Toss to coat with dressing. Let stand at room temperature 10 min. Gently toss again to serve.

Tips

Instead of peanuts, use an equal amount of unsalted, roasted cashews.
