Easy Asparagus & Crab Crustless Skillet Quiche

Ingredients

  1. 1 red pepper, finely chopped
  2. 8 eggs
  3. 60 mL water
  4. 4 mL salt
  5. 250 mL shredded Swiss cheese
  6. 227 g leg-style crab flavoured surimi, cut into bite-size pieces
  7. 3 green onions, finely chopped, divided
  8. 30 mL olive oil
  9. 15 mL butter
  10. 250 g asparagus, trimmed and cut into 1-inch (2.5 cm) pieces

Method

  1. Heat oil and butter in 10-in. (25 cm) oven-safe non-stick skillet set over medium-high heat. 
  2. Add red pepper and asparagus and cook for 1 to 2 min. or until tender-crisp. 
  3. Meanwhile, whisk eggs with water and salt then stir in cheese, crab and green onions.
  4. Add egg mixture to skillet, reduce heat to medium then cover and cook for 5 min.
  5.  Preheat broiler to high heat. Transfer skillet under broiler, 6-in. (15 cm) from heat, for 8 min. or until eggs are set.
