Ingredients

  • 1 red pepper, finely chopped
  • 8 eggs
  • 60 mL water
  • 4 mL salt
  • 250 mL shredded Swiss cheese
  • 227 g leg-style crab flavoured surimi, cut into bite-size pieces
  • 3 green onions, finely chopped, divided
  • 30 mL olive oil
  • 15 mL butter
  • 250 g asparagus, trimmed and cut into 1-inch (2.5 cm) pieces

Method

  1. Heat oil and butter in 10-in. (25 cm) oven-safe non-stick skillet set over medium-high heat. 
  2. Add red pepper and asparagus and cook for 1 to 2 min. or until tender-crisp. 
  3. Meanwhile, whisk eggs with water and salt then stir in cheese, crab and green onions.
  4. Add egg mixture to skillet, reduce heat to medium then cover and cook for 5 min.
  5.  Preheat broiler to high heat. Transfer skillet under broiler, 6-in. (15 cm) from heat, for 8 min. or until eggs are set.
