Chili-Parmesan Potato Wedges

  1. 3 large baking potatoes
  2. 2 tbsp (30 mL) vegetable oil
  3. 1 tbsp (15 mL) chili powder
  4. 1 tsp (5 mL) Tabasco or other hot sauce
  5. 1/2 tsp (2 mL) ground cumin
  6. 1/3 cup (75 mL) freshly grated Parmesan cheese
  7. 2 tbsp (30 mL) finely chopped fresh parsley
  8. salt to taste


  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. Cut potatoes in half lengthwise; then cut each half into 4 to 6 long wedges. Place in large bowl with oil, chili powder, hot sauce, cumin and salt. Toss to coat.
  2. Arrange potato wedges in single layer on baking sheet. Bake 40 min., turning over halfway, to ensure even browning. Transfer to serving platter; sprinkle with parmesan and parsley to serve.

Tip: Serve these flavourful potato wedges as a side dish for meats or alone as a snack.
