Potato-Cauliflower Mash with Goat Cheese

  1. 4 cups (1 L) peeled and diced white potatoes
  2. 3 cups (750 mL) small cauliflower florets
  3. 4 oz (125 g) herbed goat cheese
  4. 1 tsp (5 mL) salt, or to taste
  5. 1/4 tsp (1 mL) pepper


  1. In large saucepan, cover potatoes with cold salted water. Bring to a boil; simmer 15 to 20 min., or until tender. Meanwhile, bring another saucepan of salted water to boil for the cauliflower. Add cauliflower; simmer 10 min. or until tender.
  2. Drain both the potatoes and cauliflower, keeping them in their saucepans.
  3. Roughly mash the potato. Add the cauliflower into the saucepan of potato. Mash until the potato-cauliflower mixture is to preferred texture.
  4. Stir in cheese, salt and pepper. Serve mash as is or transfer to a 13 X 9-in. (3-L) baking dish. Bake in preheated 180°C (350°F) oven for about 20 min., until lightly golden.
