Pork Chops with Cheesy Corn Bread

  1. 2 boxes (8.5 ounces each) corn muffin mix
  2. 1 cup Lucerne® Whole Milk
  3. 5 Compliments Large Eggs
  4. 1 cup Signal Frozen Cut Corn
  5. 2 cups Sensations Shredded Tex Mex Cheese
  6. 1 tablespoon Compliments Butter
  7. 4 thick-cut bone-in smoked pork chops, cooked (about 2 pounds total)


  1. Preheat oven to 400°F. 
  2. In a large bowl, mix together muffin mix, milk, and eggs until smooth. 
  3. Stir in frozen corn and cheese until well blended. 
  4. Pour into a well greased 9-inch square baking pan. 
  5. Bake until bread is browned and firm when gently pressed in center, about 25 minutes. 
  6. Cool slightly.
  7. A few minutes before bread is done, melt butter in a large frying pan over medium-high heat. 
  8. Add pork chops and cook, turning once, until chops are lightly browned and heated through, 5-7 minutes. 
  9. Serve with warm cornbread cut into squares.

Healthier Alternative :For a lower-fat cornbread, substitute low fat milk and 2% Milk.
