Ingredients

  • 11/4 pounds gala apples (or other sweet-tart variety)
  • 2 tablespoons Compliments Butter
  • 1 tablespoon Compliments Granulated Sugar
  • 2 pounds bone-in pork loin chops, in 3/4”-thick cuts
  • Salt and freshly ground pepper

Method

  1. Core unpeeled apples and cut each into 8 wedges.
  2. Melt 1 tablespoon butter in a 12 to 14-inch nonstick frying pan over medium-high heat. 
  3. Add apples and cook without turning until undersides of wedges are lightly browned, about 5 minutes. 
  4. Turn wedges over and cook to brown other sides, 3 to 4 more minutes. 
  5. Sprinkle sugar over apples; stir to evenly coat. 
  6. Cook, turning often, until sugar melts and apples are glazed and well browned, about 2 more minutes. 
  7. Transfer to a serving platter and keep warm.
  8. To the pan, add remaining butter. 
  9. Season chops to taste with salt and pepper.
  10. Add chops to pan and cook until undersides are well browned, about 5 minutes. 
  11. Turn chops over and cook until other sides are well browned and meat is just barely pink in the center (cut to test), 3 to 4 more minutes.
  12. Transfer chops to serving platter and serve with the apples.
