Grilled Pork Chops with Sate Sauce

  1. 1/2 cup unsalted roasted peanuts
  2. 1/3 cup well-stirred canned unsweetened coconut milk
  3. 2 tablespoons water
  4. 1 1/2-2 tablespoons roasted red chili paste or red curry paste
  5. 1 1/2 tablespoons Asian fish sauce
  6. 1 tablespoon chopped shallot
  7. 2 teaspoons Compliments cider vinegar
  8. 1 teaspoon sugar
  9. 4 thin (1/3 -inch) bone-in pork chops (11/2 lbs. total)


  1. Prepare grill for direct-heat cooking over medium-hot charcoal (medium high heat for gas).
  2. Pureé all ingredients except pork in a blender. 
  3. Transfer to a small heavy saucepan and bring to a simmer, stirring, over medium-low heat. 
  4. Thin sauce if desired with 1 to 2 tablespoons water (can substitute the peanut saté sauce with a pre-made peanut sauce).
  5. Pat pork dry, then sprinkle all over with salt and pepper
  6. Oil grill rack, then grill pork (covered only if using a gas grill) turning once, until just cooked through, about 5 minutes total. 
  7. Serve with sauce. 
  8. Garnish with sliced cucumber, chopped peanuts and lime wedges.
