Pomegranate & Gingersnap-Spiced Yogurt Parfaits

Ingredients

  1. 3 Compliments Gingersnap Cookies, crushed
  2. 1 cup (250 mL) vanilla Greek yogurt
  3. 1 tsp (5 mL) pure vanilla extract
  4. 1/4 tsp (1 mL) each ground cinnamon and ground cardamom
  5. 1/4 tsp (1 mL) fresh orange zest
  6. 1/4 cup (60 mL) mixed berry or raspberry jam
  7. 1/2 cup ( 125 mL) pomegranate seeds

Method

  1. Whisk together the yogurt, vanilla, spices and orange zest.
  2. Measure out the jam into a small bowl and stir well until smooth.
  3. Create parfaits in each glass by layering the ingredients starting with 1 tbsp crushed gingerbread cookies, 2 tbsp yogurt mixture, 1 tsp of jam, and 1 tbsp of pomegranate seeds. Add 2 more tbsp of yogurt, 1 tsp of crushed cookies, 1 tsp jam and 1 tbsp pomegranate seeds.
  4. Serve immediately.
Tip:
Yogurt mixture can be made the day before and kept in the fridge until ready to use. Crushed cookies and pomegranate seeds can also be prepped a day ahead and stored in separate airtight containers in the fridge.
