Ingredients

  • 4 Granny Smith apples (about 6 cups/1.5 L), peeled, cored and cut into 1/4-inch (5 mm) slices
  • 1/4 cup (60 mL) granulated sugar
  • 1/4 cup (60 mL) all-purpose flour
  • 1 tsp (5 mL) vanilla
  • 1 tsp (5 mL) cinnamon
  • 1/4 cup (60 mL) unsalted butter, cubed
  • 1/2 cup (125 mL) large flake oats
  • 1/4 cup (60 mL) packed brown sugar
  • 1/4 cup (60 mL) chopped pecans
  • Pinch salt
  • 1 prepared unbaked 9-inch (23 cm) pie shell
  • 1/3 cup (75 mL) prepared caramel sauce

Method

  1. Toss together apples, granulated sugar, 2 tbsp (30 mL) of the flour, vanilla and cinnamon until combined. 
  2. Stir in half of the cubed butter. Let stand for 10 minutes.
  3. Stir together oats, brown sugar, pecans, remaining flour and salt; using fingertips, cut in remaining butter until crumbly.  
  4. Scrape apple filling into prepared pie shell. Sprinkle with oat crumble topping. 
  5. Bake in bottom rack of 350˚F (180˚C) oven for 60 to 70 minutes or until apple filling is bubbling, and crust and topping are golden brown. 
  6. Remove from oven. 
  7. Slowly drizzle with caramel sauce while still hot. Let cool before serving. 
Tip: If you like, you can substitute dulce de leche for caramel sauce. Serve with extra caramel sauce, if desired, and top each slice with a scoop of ice cream or dollop of whipped cream.
