Quick Zucchini Pickles

Makes: 250ml

Ingredients

  1. 1 green or yellow zucchini, cut into 1/8-in. (3-mm) thick rounds
  2. 1/3 cup (75 mL) apple cider vinegar
  3. 2 tbsp (30 mL) sugar
  4. 1/2 tsp (2 mL) salt

Method

  1. In bowl, toss zucchini with vinegar, sugar, salt and 1 tbsp (15 mL) water. Let stand 30 min. Drain and discard liquid from bowl. Serve zucchini pickle with sandwiches, burgers, charcuterie and cheese boards.
