Ingredients

small onion, chopped

cooked, cooled Medium-Grain Rice

Sensations Albacore Tuna in Water, drained

Compliments Complete Buttermilk Pancake Mix
1/2 cup
Compliments Shredded Parmesan Cheese
2 tbsp
minced Compliments Organics Chives
freshly ground pepper
Compliments Tartar Sauce (optional)

Method

Step 1
In a 12-inch nonstick frying pan, combine 1/2 tablespoon oil and the onion over medium high heat. Stir often until onion is lightly browned, 5-6 minutes.
Step 2
Spoon onion into a large bowl.Add rice, tuna, eggs, pancake mix, cheese, and chives to bowl. Add pepper to taste.
Step 3
Mix gently until well blended. Divide mixture into 8 or 9 equal portions. Shape each portion into a patty about 3/4-inch thick.
Step 4
Add half the remaining oil to frying pan and half the patties. Cook over medium high heat until undersides are well browned, 2-3 minutes.
Step 5
With a spatula, carefully turn patties over and cook to brown other sides, 2-3 more minutes. Transfer to a serving platter and keep warm.
Step 6
Repeat to cook remaining cakes in remaining oil. Serve warm with tartar sauce if desired.
