Orzo with Shrimp Lemon and Feta

  1. 1 bag (1 pound) Frozen Raw Shrimp (peeled, deveined, tail off; 41/60 count), thawed
  2. 1 tablespoon salt
  3. 1 tablespoon Compliments Granulated Sugar
  4. 2 tablespoons Compliments Butter
  5. 1 box (12 ounces) Orzo Pasta
  6. 6 cups Compliments Chicken Broth
  7. 1 tablespoon finely shredded and minced lemon peel (yellow part only)
  8. 1 teaspoon Compliments Organic Thyme, minced
  9. 1 tablespoon Sensations Extra Virgin 100% Olive Oil
  10. 4 ounces Compliments Feta Cheese
  11. 11/2 tablespoons fresh lemon juice


  1. Rinse shrimp and pat dry with paper towels. In a bowl, mix shrimp with salt and sugar. Cover and chill.
  2. In a 5 to 6-quart pan, melt butter over medium high heat. Add orzo and stir often until pasta begins to brown, 2-3 minutes. 
  3. Add broth, lemon peel, and thyme. Bring to a boil over high heat. Then reduce heat slightly and simmer, stirring often, until orzo is tender to bite and liquid is mostly absorbed, about 15 minutes.
  4. About 5 minutes before orzo is done, remove shrimp from refrigerator and rinse well. Pat shrimp dry between paper towels. Heat oil in a 12-inch nonstick frying pan over high heat. 
  5. Add shrimp and cook, stirring and turning often, until shrimp are pink and no longer translucent in center, cut to test,about 2 minutes. 
  6. Remove from heat.When orzo is done, stir in cooked shrimp, feta, and the lemon juice. 
  7. Transfer to individual bowls and serve immediately. 

Time Saving Tip:

Transfer the bag of shrimp from the freezer to the refrigerator the night before so that they will thaw and be ready to cook at dinnertime.
