1 cup (250 mL) Compliments Original Complete Pancake & Waffle Mix (or Compliments Buttermilk Complete Pancake & Waffle Mix)

3/4 cup (175 mL) bite-sized chopped or shredded rotisserie chicken

1 1/2 tsp (7 mL) chili powder
-
1 tsp (5 mL) smoked or regular paprika

1/2 tsp (2 mL) garlic salt
-
1/8 tsp (0.5 mL) cayenne pepper, or to taste

1 tbsp (15 mL ) white vinegar
Method
- In bowl, use a whisk to mix together pancake mix and 2/3 cup (150 mL) water until smooth.
- Mix in chicken, chili powder, paprika, garlic salt and cayenne. Just before cooking pancakes, stir vinegar into batter.
- Cook pancakes in skillet according to package instructions. Serve with hot sauce and maple syrup, if desired.
Tip:
- For gluten-free pancakes, use Compliments Gluten-Free Pancake & Waffle Mix. Mix batter according to package directions. For every 1 cup (250 mL) of mixed gluten free batter, use recipe's ingredient add-ins.
