Buffalo Chicken Nachos

  1. 2 cups (500 mL) shredded rotisserie or leftover cooked chicken
  2. 1/4 cup (60 mL) barbecue sauce
  3. 1 tbsp (15 mL) Louisiana-style hot sauce
  4. 1 bag (300 g) tortilla chips
  5. 1 cup (250 mL) shredded Cheddar cheese
  6. 1/2 cup (125 mL) finely crumbled blue cheese
  7. 2 celery stalks, finely chopped
  8. 1/4 cup (60 mL) sliced pickled jalapenos
  9. 1/4 cup (60 mL) finely chopped green onion


  1. Preheat oven to 400°F (200°C). In bowl, stir chicken with barbecue sauce and hot sauce until coated. 
  2. Lay half the tortilla chips on a large pizza pan or baking sheet. Scatter half the chicken mixture, Cheddar cheese, blue cheese, celery and pickled jalapenos on top. Repeat with another layer of chips and remaining toppings. 
  3. Bake 10 min., or until cheese is melted. Sprinkle with green onion. Serve immediately. 

Tip: Substitute pickled jalapenos with fresh seeded and sliced jalapenos.
