Beer Marinated Mushrooms

Makes: 2 Cups (500 mL)

Ingredients

  1. 1 lb (500 g) small mushrooms
  2. 1 large clove garlic, minced
  3. 3/4 cup (175 mL) ale or lager
  4. 1/4 cup (60 mL) olive oil
  5. 3 tbsp (45 mL) lemon juice
  6. 2 tbsp (30 mL) Dijon mustard
  7. 2 tsp (10 mL) Worcestershire sauce
  8. pinch dried thyme
  9. 1 tbsp (15 mL) finely chopped fresh parsley

Method

  1. Place mushrooms, garlic, ale or lager in large skillet. Simmer mushrooms until tender, about 5 min. Remove mushrooms from liquid with a slotted spoon to bowl. Simmer liquid in skillet until reduced to 2 tbsp (30 mL); pour over mushrooms.
  2. In small bowl, mix oil, lemon juice, mustard, Worcestershire sauce and thyme. Pour onto mushrooms; toss to coat. Cool to room temperature. Stir in parsley. Cover and marinate in refrigerator at least 4 hr.
