Mushroom, Onion & Gruyère Soup
Ingredients

1 tbsp olive oil

1 onion, diced
-
1 lb sliced mixed mushrooms

4 cups vegetable broth
-
2 cups milk
-
1 tsp chopped fresh thyme leaves

1 1/2 cups grated Gruyère cheese, to serve
Method
- Heat oil in large saucepan over medium heat. Add onion and mushrooms. Cook until onion turns golden and no liquid remains, about 8 min.
- Add broth and milk. Bring to a boil then reduce to a simmer. Add thyme and cook 5 min. Remove soup from heat and ladle into bowls. Top each bowl with cheese to serve.
