Mushroom, Celery & Parmesan Salad

Ingredients

  1. ¼ cup (60 mL) olive oil
  2. ½ tsp (2 mL) lemon zest
  3. 3 tbsp (45 mL) lemon juice
  4. ¼ tsp (1 mL) each salt and pepper
  5. ½ lb (250 g) mushrooms, thinly sliced
  6. 4 celery stalks, thinly sliced (leaves reserved)
  7. ½ cup (125 mL) shaved Parmesan cheese (about 1 oz/30 g)

Method

  1. Whisk oil with lemon zest and juice, salt and pepper. Toss with mushrooms and sliced celery.
  2. Transfer to serving platter. Garnish with celery leaves and Parmesan.
Tip:
Use a mandoline slicer for even mushrooms and celery slices. Use a vegetable peeler for shaving Parmesan cheese from a wedge.
