Ingredients

mushrooms, thinly sliced

celery stalks, thinly sliced (leaves reserved)
½ cup
shaved Parmesan cheese (about 1 oz/30 g)

Method

Step 1

Whisk oil with lemon zest and juice, salt and pepper. Toss with mushrooms and sliced celery.

Step 2

Transfer to serving platter. Garnish with celery leaves and Parmesan.

Tips

Use a mandoline slicer for even mushrooms and celery slices. Use a vegetable peeler for shaving Parmesan cheese from a wedge.
