Multicooker Pasta Primavera

Ingredients

  1. 2 tbsp (30 mL) olive oil
  2. 1 red pepper, diced
  3. 1 zucchini, diced
  4. 1 carrot, diced
  5. 1 jar (650 mL) Sensations by Compliments Marinara Sweet Basil Sauce
  6. 3 cups (750 mL) Compliments Fusilli Dried Pasta
  7. 1/4 cup (60 mL) finely chopped fresh parsley
  8. 1/4 cup (60 mL) 35% whipping cream (optional)

Method

  1. Set multicooker on SAUTE function according to manufacturer’s instructions. Add oil. Cook red pepper, zucchini and carrot 2 min., or until veggies start to soften.
  2. Stir in pasta sauce, 2 cups (500 mL) water and pasta. Lock on lid. Set on HIGH PRESSURE for 8 min., or until pasta is al dente. Manually release pressure according to manufacturer’s instructions before removing lid.
  3. Stir in parsley and cream, if using, to serve
Tip:
Top with grated Parmesan cheese.
For an easy pasta bake, mix shredded mozzarella with leftover pasta, top with additional cheese, bake until golden.
