Marinated Cheese Bites

Makes: Yields 24 pieces


  1. 1/4 cup (60 mL) olive oil
  2. 2 tbsp (30 mL) white wine vinegar
  3. 2 tbsp (30 mL) honey
  4. 4 cloves garlic, minced
  5. 4 tsp (20 mL) finely chopped fresh thyme
  6. 7 oz (200 g) old Cheddar, or your favourite flavour of aged Snowdonia cheese, cut into 24 cubes


  1. 2-cup (500-mL) mason jar, mix oil, vinegar, honey, garlic and thyme. Add cheese cubes to mason jar.
  2. Cover and refrigerate 2 to 8 hr. before serving. Store refrigerated up to 2 days. Serve with cocktail picks.
Tips: Substitute garlic with roasted garlic cloves. And try tarragon in place of the thyme. Also, use leftover marinade as a dressing for salads, to make garlic bread or toss with pasta
