Turkey Lettuce Cups

  1. 1 head iceberg lettuce
  2. 1 jar (8.5 oz.) hoisin sauce
  3. 1/4 cup soy sauce
  4. 1 package (1.25 lbs.) ground turkey meat
  5. 2 carrots, peeled and diced into 1/4" pieces
  6. 1 can (8 oz.) water chestnuts, drained, diced into 1/4" pieces
  7. 4 green onions, washed, trimmed and chopped
  8. black pepper, to taste


  1. Carefully remove large outer leaves from lettuce head. Wash and pat dry about 8 lettuce leaves/cups. Set aside. Combine hoisin and soy sauces.
  2. Set aside.Brown ground turkey in a 12" non-stick skillet, about 2-3 minutes.
  3. Season with black pepper. Add carrots and water chestnuts. Continue cooking for 2-3 more minutes. 
  4. Add hoisin and soy sauce, mix well and continue cooking until sauce is heated. Mix in green onions.
  5. Place one to two lettuce cups onto a plate. Scoop approximately 1/2 cup of filling into the center of the lettuce cup. Serve with chopped peanuts.
