Easy Huevos Rancheros

Ingredients

  1. 1 mL ground cumin
  2. 2 mL hot sauce
  3. 2 mL sweet or hot smoked paprika
  4. 10 mL vegetable oil (approx.)
  5. 60 mL Shredded Cheddar and Part Skim Mozzarella Cheeses
  6. 125 mL fresh cilantro, chopped
  7. Lime wedges, for garnish
  8. Multigrain with Flax Tortilla Chips, optional
  9. 8 Omega-3 Large Eggs
  10. 796 mL Diced Tomatoes, drained
  11. 454 g red or black refried beans
  12. 1 ripe avocado, peeled and diced

Method

  1. In a medium saucepan, simmer tomatoes with cumin, hot sauce and smoked paprika over low heat for 10 min. Mash lightly with a fork to break up tomatoes. 
  2. Meanwhile, in a separate small saucepan, warm beans over low heat.
  3. In a large skillet, heat 1 tsp (5 mL) oil and fry eggs (in batches, if necessary). Add more oil as needed.
  4. Divide salsa and beans among four plates. Place two fried eggs overtop each. 
  5. Sprinkle with shredded cheese, avocado and cilantro. 
  6. Garnish with a lime wedge and serve with Compliments Multigrain with Flax Tortilla Chips and a tossed salad.
