Honey Glazed Beets

Ingredients

  1. 2 pkgs baby beets, scrubbed, 794 g
  2. 2 tbsp butter, 30 mL
  3. 2 tbsp honey, 30 mL
  4. 2 tbsp raspberry vinegar, 30 mL
  5. 1/4 tsp each salt and pepper, 1 mL

Method

  1. Bring a saucepan of salted water to a boil over high heat. Cook beets for 5 min. Drain beets, rinse with cold water and then cut in half lengthwise.
  2. Bring butter, honey and vinegar to a boil in a saucepan over medium-high heat. Cook until reduced by half, 5 to 10 min. Add beets, salt and pepper and stir to coat.
